I spent years working as a professional cook.
Anthony Bourdain’s shows first pushed me to look at food beyond the kitchen, and I ended up back home — photographing food and tracking down the recipes, the producers and the stories of my own city.
Viana is a product’s paradise. We have recipes for every taste, but you need to know where to go: where the food is still authentic and still made the way it has always been made. I like being that person — the friend who takes you where locals actually eat.
What I care about most are the people who keep this alive — the producers, the cooks and the shopkeepers who still honour local products. You’ll meet some of them on the tour.
Every tour is guided by me, personally. No hired guides, no scripts. I trained and worked as a professional cook — I can tell you how each dish is made, not just where to eat it. I know the owners by name. You'll eat in places most visitors won't find. I photograph and research this region's food year-round — the stories you'll hear are first-hand.
